The characteristic taste and particular aroma of Ouzo Plomari are the result of a family recipe, inherited from Isidoros Arvanitis, which he kept in deep secrecy.

The recipe is divided into two parts: one for the first distillation and one for the second distillation. Each part is known by heart by only one person from the distillery. One person knows the fruits and herbs for the first distillation, and the other knows the fruits and herbs for the second distillation.

The recipe contains a total of over 15 fruits and herbs from the island of Lesbos: dill, aniseed, cinnamon, nutmeg and mastic extract, among others.
